Hey this is Symon cooking with Club EVOO, I i found a great side to anybody’s BBQ.
First you’ll need a few things
3 Large Potatoes
4 slices Cooked and Crumbled Bacon
2 tablespoons Extra Virgin Olive Oil
1 minced Clove Garlic
3/4 cup Cheddar Cheese (I use graded Mexican Cheese )
1/2 cup Your Favorite Barbecue Sauce
1/2 pound Pulled Pork or Tender Beef
Sour cream
2 tablespoons Green Onion
(for some extra spice a little hot sauce, I use tapatio)
Directions:
Be sure to Preheat your oven to 350 degrees F.
Bake potatoes until tender, so about 1 hour. at the same time bake 3 – 6 strips of bacon on a small sheet pan in the oven for 15 minutes.
Remove the potatoes from oven and let sit until cool enough to handle and crumble the bacon once it’s cooled.
Preheat your grill to medium heat.
Cut potatoes in half, lengthwise, and spoon out the flesh, leaving a half inch shell.
Heat the EVOO in a sauce pan and add minced garlic. Brush potatoes with the EVOO and garlic mixture. Flip over and based the bottoms.
Place potatoes on grill and cook until crisp, about 4 to 4 1/2 minutes on each side and remove from grill.
Divide the cheese, barbecue sauce and pulled pork among the potatoes. Top potato skins with sour cream, crumbled bacon and chives for garnish and a little tapatio for flavor
Try it, Symon Sez You’ll love it.
